Since my husband is a total math nerd engineer by profession, we've always enjoyed this silly tongue-in-cheek holiday with our girls.
Now with both of the kids in advance math classes, the humor of the holiday is definitely not lost on them!

Perfect Pie Crust for Pi Day
First, let's talk about pie crusts for a moment. It is important to keep the focus on fun for this holiday, you do not need to feel pressure to make a tricky from-scratch recipe unless you want to.
Many of the recipes below take creative license with what is considered a "pie" and there are several easy shortcuts to choose from so you can keep it manageable during a busy weeknight.

- Homemade Butter Pie Crust: When you have the time or interest, nothing beats a flaky homemade pie crust for a special recipe. I love making my homemade butter pie crust right in my food processor in under a minute.

Chicken Pot Pie
The absolute easiest pie to have for dinner on my entire site is this light chicken pot pie.
You make the chicken and vegetable filling and then serve it with either a phyllo dough crust or with baked biscuits on the side for a "crustless pie."
You could also spoon the filling into a store bought pie crust if you prefer to have a more traditional pie for Pi Day.
Ham Pot Pie
If you don't have leftover ham in the fridge, you could make my ham pot pie using a chopped up ham steak or thick cut deli meat.
I usually make this after Easter when I have some of my glazed spiral ham left but it is delicious enough to enjoy all year long.
