When I was pregnant with my second daughter, I craved EVERYTHING LEMON. I seriously could not get enough of it.

Lemon chicken, lemon pasta, lemon cookies, I even had the habit of keeping fresh slices of lemon on a plate so I could smell them when I wasn't feeling well.

There's just something about that bright, fresh, tart flavor and delicious aroma that makes any recipe with lemon juice and lemon zest just that much more delicious.

The baby arrived but the craving never left. I still adore lemon everything and use it in my cooking any chance I can get!

Classic Lemons vs. Meyer Lemons

Because of my significant love of lemons, my husband gave me a patio Meyer lemon tree for my birthday several years ago.

He didn't know there was a difference between regular lemons and Meyer lemons when he bought it for me, but since then we've become lemon connoisseurs.

For the most part, those two kinds of lemons are interchangeable in the recipes below but they will definitely impact the final flavor.

Here's what you need to know when choosing which lemon to use:

Classic Lemons:

These have a very bright, very strong, very tart lemon flavor. They hold up well in baked goods and sauces when you really want that strong lemon flavor. The skin is very thick, you won't want to eat it but it can be easily zested.

Meyer Lemons:

Meyer lemons, on the other hand, have a much milder lemon flavor. They taste like a cross between a classic lemon and an orange. The skins are much more tender and thin, you can even eat them. This makes them a great choice for roasted lemons or making candied lemon slices. I'll make a list of Meyer lemon recipes separately so you know just which ones to use if you're growing a patio tree, too.

Lemon desserts are popular for a reason. There's just something so settling to the tummy after a meal when you eat a fresh and zesty lemon treat.
