Crock Pot Corn Casserole

Crock Pot corn casserole is a traditional holiday side dish made from Jiffy cornbread muffin mix, canned corn, and ooey gooey cheddar cheese. This delicious recipe is perfect for feeding a hungry crowd.

For our Thanksgiving menu, dinner just wouldn't be the same without my mom's Italian sausage stuffing but I know cornbread stuffing is also super popular.

Instead, I prefer to serve my mom's recipe and then incorporate cornbread flavor with this easy Crock Pot corn casserole made from Jiffy cornbread muffin mix.

At Christmas time when we're serving a Crockpot spiral ham, this is another great dump and go side dish I can have cooking while we're at Christmas Eve church. We come home and dinner is ready to eat!

Ingredients

The ingredients to make Jiffy cornbread casserole are lined up on the counter next to the Crock Pot.

This cozy Crockpot side dish only needs a few easy ingredients:

  • Canned Corn: I used both cream style corn and whole corn kernels for the perfect texture.
  • Jiffy Corn Muffin Mix
  • Eggs
  • Sour Cream
  • Shredded Cheddar Cheese: Cheddar is the classic choice, but this is a fun spot to play with some variations. Be sure to see my notes below for ideas.
  • Butter
  • Sugar

Add the Corn and Wet Ingredients

First, add all the canned corn with their juices to the slowcooker.

Add the sour cream, eggs, and shredded cheese. Stir everything together.

Add the melted butter and stir again. By doing this in two steps, it helps prevent the hot butter cooking the raw eggs.

The corn, sour cream, eggs, shredded cheese, and sugar are in the bowl of the Crock Pot.

Mix the Jiffy Cornbread in the Crock Pot

Add the Jiffy cornbread muffin mix and the sugar to the slowcooker and stir it in until no more dry pockets of mix remain.

The dry cornbread mix has been added to the slowcooker.

Cooking Instructions

Cover the Crock Pot and cook on HIGH for 2 - 3 hours or until the center of the casserole has set completely.

The finished corn casserole is in the Crock Pot and has chopped green onions over the top.

Variations

If you want to make your corn casserole more unique, there are a few delicious ingredient additions and variations you could play with:

  • Swap the Cheddar: You could use pepperjack cheese for a bit of kick, Monterey Jack cheese, or Colby Jack cheese in place of the cheddar.
  • Fresh Jalapeño: Mince a fresh jalapeño pepper and add it to the mix before cooking.
  • Cayenne Pepper: Add a dash or two of cayenne pepper, it won't make the casserole spicy but will definitely enhance the flavor. 
  • Brown Sugar: Use brown sugar in place of the white sugar.
  • Peppered Bacon: Stir in some cooked and crumbled peppered bacon to the mix or reserve it for a garnish on top.
  • Hot Honey: For a sweet and spicy spin, use Mike's Hot Honey in place of the white sugar. This would also be a great condiment to offer for drizzling over the top of individual servings.
  • Green Onions: This is my favorite garnish, but you could also chop them up and stir them into the mix if you want to add some onion flavor to the casserole.

Make Ahead Tips

Corn casserole is best enjoyed served fresh as soon as it is finished cooking. Since the recipe is so easy, it should only take a few minutes to prep earlier in the day.

Leftovers can be reheated in the microwave but the texture is definitely better the first day.

Classic corn casserole cooks in a slowcooker for a hands-off side dish for your holiday meal. Sweet Jiffy cornbread mix with canned corn and shredded cheese makes a delicious addition to a cozy family dinner.

Ingredients
  

  • 2 (12 oz) cans cream style corn
  • 2 (15 oz) cans whole sweet corn drained
  • 2 eggs
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 8 tbsp (1 stick) butter melted
  • 2 (8.5 oz) boxes of corn muffin mix like Jiffy
  • 2 tbsp sugar

Instructions

  • Add the canned corn, eggs, sour cream, and shredded cheese into the bowl of a 6 qt Crock Pot. Stir everything together until well mixed. Drizzle in the melted butter and stir again.
  • Add the Jiffy cornbread mix and sugar and stir it into the wet mixture until no dry pockets of mix remain.
  • Place the lid on the slowcooker and cook on HIGH for 2 - 3 hours. The casserole should be cooked through and the center will be set.
