Ingredients
This easy bread machine recipe only requires a few simple ingredients:
- Bread Flour: If you want to use this as a sandwich bread, I strongly recommend bread flour. If you're ripping it up into a stuffing recipe, all-purpose flour would work find if you prefer to use it.
- Brown Sugar
- Fresh Herbs: I used fresh sage, rosemary, and thyme. You could use your favorite blend of fresh herbs as desired.
- Lemon
- Kosher Salt
- Olive Oil
- Active Dry Yeast: You don't need to buy bread machine yeast specifically but it would work if that is what you have on hand.

Add the Wet Ingredients First
Most bread machine recipes start the same way, by adding the wet ingredients to the pan with the paddle attachment in place.
Add the water and the olive oil.
Add the Dry Ingredients
Then add the flour, brown sugar, and kosher salt.
Zest the lemon and then dig a little well in the center for the yeast:
Season the Bread
Mince the fresh herbs you plan to use and add them right on top. Just know that they will remain that size as they bake so be sure to chop them finely:
Bread Machine Program Settings
Place the bread pan back into the bread maker.
Select the 2-pound loaf size.
Then select your desired darkness setting, I used Medium.
Select the BASIC/WHITE program and then hit START.
The baking program will take about 3.5 hours to finish.
Remove the bread from the baking pan and let it cool for at least 10 minutes before slicing.
How to Make Stuffing Croutons

Serving Suggestions
The most obvious way to use up this loaf of herby bread is to cube it up and turn it into a fabulous homemade stuffing.
It would be amazing in my mom's Italian sausage stuffing or this easy Crock Pot stuffing. You might also love this easy make ahead Air Fryer stuffing.
If you prefer to slice it into sandwich slices, you could use it as the base of my open face turkey sandwich with homemade gravy or layer up boneless turkey breast with apples, arugula, and brie like my turkey brie sandwich.

Stuffing Bread
Ingredients
- 1 1/2 cups + 1 tablespoon water
- 2 tablespoons olive oil
- 4 cups (548 g) bread flour
- 1 1/2 tablespoons brown sugar
- 1/4 cup minced fresh herbs mix of sage, rosemary, thyme
- 2 teaspoons lemon zest
- 2 teaspoons kosher salt
- 2 1/2 teaspoons instant active dry yeast
Instructions
- Add the ingredients to the bread machine pan fitted with the paddle attachment in the order they are listed. Start by adding the water and olive oil and then add the dry ingredients right on top. Add the flour, brown sugar, minced herbs, lemon zest, kosher salt, and then dig a shallow well in the center to place the yeast.
- Place the bread pan in your bread machine and close the lid.
- Select the 2-pound bread size.
- Select your desired darkness setting, I used Medium.
- Select the BASIC/WHITE program and then press Start.
- The baking cycle will take about 3 1/2 hours to complete. When the bread is finished baking, remove it from the bread pan and let it cool for at least 10 minutes before slicing.
