    Roasted Broccoli and Carrots {Primavera Veggies}

    Roasted broccoli and carrots tossed with red bell peppers and red onion are the perfect addition to a fresh pasta dinner or delicious side dish for a meaty main dish. Bake the veggies in the oven or air fryer for an easy veggie dish for family dinner.

    One of the things I'm most proud of when it comes to cooking for my family is that both of my kids AND my husband have learned to love fresh broccoli all because of how I cook and serve it.

    The secret trick?? Roasting!

    Roasted broccoli and carrots is an even more brilliant idea when it comes to making veggies for picky eaters because the variety of vegetables on this pan add sweetness to the final dish.

    You can season it with a simple pinch of salt and pepper or add any number of options for seasoning blends to pair it perfectly with whatever dinner you've got planned.

    Roast them in the oven or air fryer for a quick vegetable side dish even on a busy night.

    Why This is the Best Recipe

    When it comes to adding plenty of veggies to your family dinner, I think this is the best roasted broccoli and carrots recipe because:

    1. Kid-Friendly: I'm not kidding, broccoli is both of my kids' favorite vegetables because of this recipe. They love the crispy edges.
    2. Crispy and Sweet: Roasting brings out the natural sweetness in the vegetables and gives them a fantastic texture.
    3. Easy to Season: Just a little salt and pepper works but you can add all kinds of fun seasoning options to the mix. Be sure to check the recipe card for ideas.
    4. Great Side or Add to a Stir Fry: You can serve these on the side of your main dish but they also make a perfect addition to a pasta or rice dish.

    Ingredients

    The veggies have been chopped and placed on a large baking sheet.

    The ingredients list is short and sweet but you can easily adjust it as needed:

    • Fresh Broccoli: I buy broccoli crowns and cut them into florets by hand. You could buy pre-cut broccoli florets or the entire broccoli stalk if you prefer. This recipe will not work as well with frozen broccoli because it tends to steam on the pan.
    • Fresh Carrot: I cut whole carrots into matchstick sticks but you could use baby carrots to keep it easy.
    • Red Bell Pepper: I love the bright red color and sweet flavor a red bell pepper adds to the pan but orange, yellow, or green bell peppers would work, too.
    • Red Onion: Again, I love the color and flavor of a purple onion but a regular yellow or white onion would work. If vidalia onions are in season, you may want those, too.
    • Olive Oil
    • Salt and Pepper

    Prep the Veggies

    This roasted vegetables recipe is so easy to prep because I toss everything together right on my roasting sheet.

    Add the chopped broccoli, carrots, red peppers, and onions to the pan.

    Drizzle the olive oil over the top and toss with a spoon or your hands. Make sure all the veggies are coated in the oil.

    Sprinkle the salt and pepper over the top and you're ready to go.

    Roasting Instructions

    Preheat the oven to 425°F.

    Roast the broccoli and carrots mix for 20 minutes, tossing the vegetables about half way through the baking time to make sure they char on all sides.

    The vegetables have been roasted and have charred tips.

    Air Fryer Instructions

    If you want to roast the vegetables in an air fryer, that is an easy enough tweak to make.

    Simply preheat your air fryer to 400°F for 5 minutes.

    Add the prepped veggies to the air fryer basket and roast for 20 minutes.

    Shake the basket about half way through to make sure the veggies cook evenly.

    Variations

    For added flavor, you can consider sprinkling any of the following seasonings over the roasted broccoli and carrots depending on how you plan to use them:

    • Crushed red pepper flakes for spice
    • Italian herb blend
    • Oregano
    • Basil
    • Thyme
    • Garlic salt
    • Lemon pepper blend

    Serving Suggestions

    The vegetables have been tossed with farfalle pasta and are served in a white bowl.

    My favorite way to use these roasted broccoli and carrots is to toss them with zucchini and tomatoes in my favorite farfalle primavera recipe.

    They would also taste amazing with my favorite lemon butter pasta with fresh chives or my fresh tomato pasta toss.

    If you prefer to use them as a side dish, they would go fantastically with my easy baked chicken parmesan or

    • A white bowl is filled with farfalle pasta and fresh vegetables.

    • A bowl of spaghetti in a lemon butter sauce has fresh chives and slices of fresh lemon on the side.

    • A white bowl is filled with thin spaghetti and fresh cherry tomatoes and arugula. Parmesan is sprinkled over the top.

    • A dinner plate has a serving of baked chicken parmesan, farfalle pasta, and a green salad.

    This easy roasted vegetables side dish is perfect for serving alongside your favorite Italian pasta dishes or even tossing right into a pasta primavera.

    Ingredients
      

    • 1 broccoli crown chopped into bite-sized florets
    • 1 carrot peeled and sliced into short strips
    • 1 red bell pepper sliced into thick strips
    • 1 small red onion sliced into thick strips
    • 2 tablespoon olive oil
    • 1 pinch salt and pepper

    Instructions

    • Add the chopped broccoli, carrots, red peppers, and red onion slices to a large baking sheet. Drizzle the olive oil over the top and toss the vegetables with a spoon to coat. Sprinkle the salt and pepper over the top.

    Oven Instructions

    • Preheat the oven to 425°F.
    • Roast the vegetables for 20 minutes, tossing them half way through so they brown on all sides.
    • The veggies can keep warm in the oven as needed if you are still prepping the rest of your meal. Just turn the oven off and crack the door an inch so they don't overcook.

    Air Fryer Instructions

    • Preheat your air fryer to 400°F.
    • Add the prepared vegetables coated in oil to the air fryer basket and cook for 10 minutes. Shake the basket to toss the veggies and continue to cook for an additional 10 minutes or until the veggies just begin to char.
