Bread Machine Potato Rolls
These bread machine potato rolls are ultra-soft and fluffy with a delicately crispy outer crust. They are perfect for family dinners and holiday feasts. Made with simple pantry staples and your bread maker dough program, you can bake them ahead and reheat to save time.

These light and fluffy bread machine potato rolls are the closest thing to those sourdough rolls minus the tang from the sourdough starter.
They bake up with the fluffiest, softest insides and the most gorgeously crisp but tender crust. My youngest daughter was obsessed with these for days and at them for breakfast, lunch, and dinner until they were gone.
You can prep the rolls in advance of a holiday dinner so easily and that slight sweetness from the potato makes them just perfect for pairing with a roast turkey or spiral ham.

Ingredients

This wholesome bread recipe starts with just a few easy ingredients:
- Instant Mashed Potato Flakes: You'll find boxed potato flakes in the aisle near the gravies and packaged side dishes.
- Bread Flour: You could use all-purpose flour but the rolls won't hold their shape quite as well.
- Buttermilk: You could substitute milk with lemon juice but I honestly think actual buttermilk is a better choice for this recipe since it has a thicker texture.
- Egg
- Sugar
- Active Dry Yeast: You do not need to use "bread machine yeast" but you can use it if you already have that on hand.
- Kosher Salt

Prep the Dough
Start by adding the liquid ingredients to your bread pan fitted with the paddle attachment. The water, buttermilk, and egg should go in first.
Then add the dry ingredients on top. Be sure to add the flour first, you want to keep the potato flakes away from the moisture until the machine is ready to mix.

Place the bread pan back in the bread maker and select the DOUGH program. Press START. The machine will take about 90 minutes to finish the dough.
Transfer the dough to a floured baking mat and remove the bread paddle.
Shape the Rolls
Set out a large rimmed baking sheet lined with paper so you have some place to set your shaped dinner rolls.
The dough will be quite sticky and you may need to sprinkle some additional flour over the ball of dough before you portion it out.
Cut the dough into 24 equal portions. Shape each dinner roll by tucking the sides underneath. If the dough portion is too sticky to shape, quickly toss to coat in additional flour.

Cover the pan loosely with plastic wrap.
Rising Time
Let the potato rolls rise for about 60 minutes or until they've nearly doubled in size.
I used the poke test to check for their readiness. When you gently poke the side of one roll it should leave an indent that slowly fills back in over the course of 10 seconds. If the indent bounces back immediately, they need more time.
When they're ready to bake, brush the tops with milk.

Baking Instructions
Preheat the oven to 375°F.
Bake the potato rolls for 15 - 18 minutes or until they are golden brown on top and register 195°F with an instant probe thermometer.

Make Ahead Tips
There are several ways you could prep these dinner rolls in advance of a special family meal:
Prep the Dough: You could prep the dough, shape the rolls, cover with plastic wrap, and immediately put into the fridge before they rise. Let them chill overnight. They can rise on the counter before baking fresh the next day.
Bake Ahead: You could bake the rolls completely up to 2 days in advance and then warm them on a sheetpan in the oven to restore their texture before serving. Keep them in a bread bag to stay fresh.
Bake and Freeze: You could bake the rolls completely, let cool completely, and then store in freezer-safe bread bags and freeze for up to 3 months. Loosen the seal on the bag and let them defrost in the fridge overnight. Warm them on a sheet pan in the oven before serving.
Variations
- Cheesy Potato Rolls: Add shredded cheddar or parmesan to the dough during the mix-in phase.
- Herbed Potato Rolls: Add dried rosemary, thyme, and garlic powder on top of the dry ingredients before the dough is mixed.

Serving Suggestions

These fluffy potato rolls are amazing served warm with a pat of butter. They are one of my new favorite dinner rolls to serve with soup for dunking. We loved them with leftover beef and barley soup.
If you want to use them as a slider roll, I suggest baking them the day before. They are still soft but have a firmer texture the next day that would work better for slicing and using in one of these chicken slider recipes.
During the holidays, you could serve them as a Thanksgiving bread or save them for making open face turkey sandwiches with leftover turkey and gravy.
They would also pair really well with your holiday spiral ham!

- Preheat the oven to 375°F. Remove the plastic wrap and brush the reserved milk over the tops of the rolls. Bake for 15 - 18 minutes or until they are golden brown and register 195°F with an instant probe thermometer.
