Loaded Baked Potato Dip
Loaded baked potato dip brings together all the best parts of your favorite comfort food: sour cream, cheddar, crispy bacon, and fresh chives. The best part? It's scoopable for dipping baked waffle fries or dunking hearty kettle cooked potato chips.

Sometimes I serve a new recipe to the family and they enjoy it and move on with their day.
Then there are the times I introduce a new recipe like this loaded baked potato dip and my family downright loses their minds.
Between my husband and younger daughter, this bowl of bacon-filled goodness disappeared over the course of just a couple days as they found countless ways to use it.
Baked waffle fries? Yum. Hearty potato chips? Yum. Desperately scooped up with crackers when they ran out of potatoes? Yep. I've seen it happen.
Needless to say, my husband believes this to be a new staple in our fridge and it will most definitely be making a reappearance as we head into potato season this fall.

Ingredients

This crazy-easy dip starts with just a short list of items:
- Bacon: I browned up a batch of my favorite peppered bacon in the oven. You can use any bacon you love.
- Sour Cream
- Shredded Cheddar Cheese
- Fresh Chives
- Hot Sauce: This doesn't make the dip spicy, it just adds a depth to the flavor.

How to Make It
Add the sour cream to a mixing bowl. Top it with the shredded cheddar, 2/3 of the bacon, 2/3 of the fresh chives, and the hot sauce.
Keep the remaining bacon and chives for garnish.

Stir everything together until well combined.
Chill It
Scrape the dip into a pretty serving bowl for a nicer presentation.
Cover it in plastic wrap and chill for about 30 minutes for the best flavor.

Bake the Waffle Fries
I prepared a package of frozen waffle fries with a sprinkle of seasoned salt and black pepper according to the package directions in my air fryer.

Garnish Tips
While the fries are finishing, let the dip rest on the counter so it has a chance to soften up.
Sprinkle the reserved bacon and chives over the top.
Then pile up the hot fries on the platter for dunking.

Make Ahead Tips
You can prep the dip up to 2 days in advance of serving. I recommend storing the garnishes separately so the bacon retains a crispy crunch.
Variations
- Monterey Jack: You can swap the cheddar out and use Monterey Jack for a fun change.
- Spicy Twist: Stir in diced pickled jalapeños for kick.
- Greek Yogurt: You can substitute plain Greek yogurt for the sour cream if you want a tangier flavor.
Serving Suggestions

I served this loaded baked potato dip with seasoned waffle fries and my husband went wild for the pairing. This would make an amazing football party snack or potluck party appetizer to share with friends.
The dip is so thick you need a hearty dipper to withstand the texture. I'd recommend Kettle-cooked potato chips since they don't break as easy.
You could also serve it with roasted ranch potatoes, roasted mini potatoes, stir it into mashed potatoes, or use it as an actual baked potato topping for dinner!

Loaded Baked Potato Dip
Ingredients
For the Dip:
- 2 cups light sour cream
- 2 cups shredded cheddar cheese
- 8 strips peppered bacon cooked and crumbled
- 1/3 cup minced fresh chives
- 2 teaspoons hot sauce like Texas Pete
For Serving:
- 1 (22 oz) frozen waffle cut fries
- 2 teaspoons seasoned salt homemade or store bought
- 1/2 teaspoon fresh cracked black pepper
Instructions Start Cooking
Prep the Dip:
- Scoop the sour cream into a medium sized mixing bowl.
- Reserve 1 - 2 tablespoons of the crumbled bacon and chopped chives. Add the shredded cheddar, remaining crumbled bacon, hot sauce, and remaining chopped chives to the sour cream. Stir until evenly coated.
- Scrape the dip into a pretty serving dish. Sprinkle the top with the reserved bacon and chives. Serve immediately or cover with plastic wrap and store in the fridge until ready to serve.
Prep the Waffle Fries:
- Spread the waffle fries on a large baking sheet. Sprinkle the seasoned salt over the top and bake according to the package directions.
- Sprinkle the black pepper over the top before serving the fries with the baked potato dip.
Recipe Notes
How to Serve with Plain Potato Chips:
This baked potato dip is best used as a condiment on a baked potato or alongside baked french fries. If you'd like to serve it as a party appetizer with plain potato chips, the dip will need a little more seasoning. Simply stir in:- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
