Ingredients

The ingredients to make Street Corn Dip are on the kitchen counter.

Make with simple ingredients (and easy swaps as needed), this budget-friendly appetizer is easy to prep:

  • Frozen Corn: I think thawed frozen corn is the fastest ingredient to use but if you have fresh sweet corn you could cut it from the cob.
  • Cotija Cheese: This is the most traditional Mexican street corn ingredient but sometimes it can be tricky to find at the store. I used Queso Fresco from Costco. It has a sweeter flavor profile than cotija (which is more salty) but it worked great and crumbles so well. If you can't find either one, crumbled feta cheese would be the next best substitution.
    NOTE: My grocery store carries cotija cheese. It is found in the refrigerated section near the Mexican crema, which is like sour cream. It was out of stock the day I made this so I used my easy Costco swap.
  • Sour Cream: If you want, you could use Mexican crema for a more authentic flavor. You might find it right by the cotija cheese!
  • Butter
  • Mayonnaise
  • Fresh Lime
  • Fresh Jalapeño
  • Fresh Cilantro
  • Chili Powder
  • Cumin
  • Paprika

How to Make the Dip

In a large skillet over medium-high heat, melt the butter. Add the thawed corn and cook it, letting it sit between stirs for a few minutes so it has a chance to char a bit.

Remove it from the heat and let it cool completely. This can be done more quickly if you transfer the cooked corn to a clean plate and spread it out into an even layer to cool.

Meanwhile, add the cotija cheese, cilantro, jalapeño, mayonnaise, sour cream, chili powder, cumin, paprika, lime zest and lime juice to a large mixing bowl.

Stir the dip base together. Once the corn is completely cooled, add it to the bowl and stir it in.

Scrape the dip into a pretty serving bowl and cover. Refrigerate it for at least 30 minutes for the flavors to mingle.

Make Ahead Tips

You can prep this cold dip up to 2 days in advance if you keep it covered in the fridge.

Reserve some of the crumbled cheese and fresh cilantro for garnishing the top just before serving.

If you have any leftovers, you can keep them in the fridge and plan to use it as a spread for pulled chicken sandwiches or as a fun topping for taco night.

Variations & Substitutions

  • Cotija Cheese: You can use queso fresco or feta cheese instead.
  • Sour Cream: You could use Mexican crema for a more authentic flavor or Greek yogurt to add more tang.
  • Diced Red Bell Pepper: For a pop of color and more fresh veggie flavor, you could stir in some pepper.
  • Spicy Mexican Corn Dip: If this dish isn't spicy enough for your taste, you could keep some of the jalapeño ribs & seeds or add a dash of hot sauce or cayenne for kick.

Serving Suggestions

Let the dip stand at room temperature for 10 minutes or so before serving. Chilling will firm up the dip making it hard to scoop but it will soften quickly as it sits.

Serve alongside a big platter of tortilla chips, we love the "hint of lime" flavored chips with this!

Sliced mini bell peppers would work perfectly for a lower carb scooper option, too.

While we love this as a party dip, you could also make it for slathering over a grilled burger (beef or chicken!), topping a grilled chicken breast, or as a unique taco topping.

I would spread it on a tortilla and pair with my savory Mexican pulled pork carnitas or these easy weeknight pork tenderloin tacos. You could wrap up some Mexican shredded chicken and use the sweet corn dip for crunch!

Ingredients
  

  • 1 (10 oz) bag of frozen corn thawed, or about 2 1/2 cups corn kernels
  • 2 tablespoons butter
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 lime zested and juiced
  • 1/2 cup cotjia cheese or feta cheese
  • 1 jalapeno ribs and seeds removed, minced
  • 1/2 cup fresh cilantro chopped

Instructions
 Start Cooking

  • Crumble the cotija cheese into a medium-sized bowl. Add the cilantro, minced jalapeno, mayonnaise, sour cream, chili powder, cumin, paprika, and lime juice. Add the cooled corn on top. Stir everything together until well combined..
  • Scrape the dip into a pretty serving bowl and garnish with additional crumbled cheese and cilantro as desired.
  • Chill the dip for at least 30 minutes before serving. It is delicious with tortilla chips for dunking.
