Shredded Beef in the Crockpot

Shredded beef in the Crockpot is a hands-off way to make tender, savory beef packets for the freezer for easy weeknight dinners all season long.

As much as we enjoy eating red meat, I do try to limit how much and how often I serve it for family dinner.

The best part about making shredded beef in the Crock pot is that I can mix in a variety of veggies to help stretch the meat farther and bulk up the dinner plate with creamy mashed potatoes or wavy egg noodles.

Then, I take the leftovers and freeze them in smaller portions so I can spread out how often the meat gets served at the table without having a single bite go to waste!

I love to use my slowcooker to make cozy comfort dinners for my family on busy nights. I think this is the best shredded beef in the Crockpot recipe because:

  1. Just 3 Ingredients: With such an easy list, you know prep time is going to be as quick as Dump and Go!
  2. Tender and Flavorful: The beef gets the perfect tender texture as the dressing marinates it over the slow cooking time. The resulting gravy is packed with flavor.

This dump and go Crockpot recipe only needs 3 simple things:

  1. Beef Pot Roast: Also known as chuck roast, you need a large beef roast that will still fit in your slowcooker.
  2. Sweet Vidalia Onion Dressing: Vidalia onions are much sweeter than normal onions. There are several popular salad dressing brands that make this particular flavor.
  3. Black Pepper: I sprinkled some fresh cracked black pepper over my beef before it cooked.

Cooking Instructions

Spray your Crockpot with cooking spray and then place the beef roast on the bottom.

Sprinkle the black pepper over the top, then pour the vidalia onion dressing over the beef.

The beef roast is inside the slowcooker and has had seasoning sprinkled over the top.

Cover the slowcooker with the lid and cook the beef on LOW for 7 - 8 hours or on HIGH for 5 - 6 hours.

You'll know the beef is done when it easily falls apart when you poke it with a fork.

Shred the beef using two forks or a pair of tongs to pull it apart right in the juices in the Crock Pot.

Easy Veggie Mix-Ins

Depending on how you plan to serve the shredded beef, you may want to add some vegetables to the slowcooker.

I had some frozen corn and frozen peas on hand, so I added them to the Crock Pot for the last 15 minutes of cooking time for them to warm through in the gravy.

Other delicious options could include:

  • Frozen Green Beans
  • Frozen Mixed Vegetables: Corn, peas, carrots, green beans
  • Frozen Peas
  • Frozen Corn

Make Ahead and Freezing Tips

If you don't need an entire beef roast right now, go ahead and still make this entire dish because it freezes beautifully.

Let the shredded beef cool completely before dividing it up in smaller containers. Ladle the juices over the beef containers evenly, making sure to leave room for the liquid to expand as it freezes.

To use the frozen beef packets, let them thaw in the fridge overnight or defrost them gently in the microwave.

Serving Suggestions

The shredded beef has been served over the wavy egg noodles.

We enjoyed the shredded beef over buttered wavy egg noodles with sweet corn and baby peas mixed in.

The easiest way to serve this shredded beef is over a bowl of creamy mashed potatoes. You can make my Crockpot mashed potatoes at the same time as the beef cooks if you have two slowcookers or just grab a container of prepared potatoes from the grocery store.

Other easy potato options to serve on the side could include my slow cooker sweet potatoes, these crispy ranch roasted potatoes, or a pan of cheesy cornflake potatoes.

If you want to serve your veggies on the side instead of mixing them in, I would recommend making a quick batch of my air fryer green beans, these sauce pan glazed baby carrots, or pop a sheet pan of oven roasted carrots in to bake.
