Mint chocolate lasagna, also known as shamrock shake torte around St. Patrick's Day, is a quick and easy no bake dessert that is perfect to bring to a potluck party.

With St. Patrick's Day just around the corner, I wanted to make a special treat for my kids inspired by one of their favorite seasonal goodies -- the minty green shamrock shakes.

This delicious mint chocolate lasagna dessert starts with an Oreo cookie crust and this is topped with a minty-green shamrock shake-flavored cream cheese layer. A rich chocolate pudding layer goes on top of that and then the whole thing is frosted with more whipped topping and a cherry on top!

An easy make ahead dessert for a potluck party or special event, no one could resist a piece of this torte.

Ingredients

The ingredients to make a shamrock shake torte are on the counter.

The ingredients to make this no bake dessert are so simple:

  • Mint Oreo Cookies: You could use regular chocolate sandwich cookies but I loved using the mint flavored ones because they boosted the overall mintiness of the dessert.
  • Chocolate Pudding: It is essential to buy Instant pudding, not the Cook and Serve kind.
  • Cream Cheese: I recommend a full-fat cream cheese because the torte will slice more neatly. If you don't mind softer layers, you could use a light cream cheese.
  • Whipped Topping: You'll need to buy two tubs. You'll divide one among the layers and use the second for the frosting on top.
  • Butter
  • Milk
  • Peppermint Extract
  • Green Food Coloring
  • Maraschino Cherries: These are optional but they definitely make the dessert taste even more like a shamrock shake.
  • Festive Sprinkles: I used green and white jimmies for St. Patrick's Day but you could use red and green for Christmas, too.

Start by preparing your Oreo cookie crust so it has time to chill and set before adding the next layer.

Prep the Shamrock Shake Layer

To make the creamy, minty green layer, start by placing the softened cream cheese in a mixing bowl and beat it with an electric hand mixer till smooth.

Add the powdered sugar and beat it in.

Add the peppermint extract and green food coloring and beat them in.

Fold in just half of one of the tubs of whipped topping.

Spread the shamrock shake layer over the prepared Oreo cookie crust and chill for at least 15 minutes.

Make the Pudding Layer

Add the pudding mixes to a large mixing bowl and pour in the milk. Beat them together for 30 seconds or until the powder has dissolved in the milk.

Add the remaining half of the tub of whipped topping and continue to beat the pudding for 2 minutes. It will be quite thick.

Spread the chocolate pudding over the shamrock shake layer.

Chill the dessert for at least 2 hours before serving.

Frost and Decorate

To finish the torte, frost the top with the second top of whipped topping.

To really boost the shamrock shake flavor, I decorated mine with maraschino cherries.

If you just want a mint chocolate lasagna dessert, you could decorate it with sprinkles, mini chocolate chips, or even chocolate curls.

The finished torte has whipped topping frosting and maraschino cherries dotted over the top.

Make Ahead Tips

You can make the entire dessert in advance and keep it stored in the fridge covered in plastic wrap for up to 2 days.

I recommend not frosting it with the second tub of whipped topping until just before serving so that the top stays pretty.

Serving Suggestions

The layered no-bake dessert is on a party plate. You can see the light green cream cheese layer and chocolate pudding layer under the whipped topping and sprinkles.

Ingredients
  

For the Oreo Cookie Crust:

  • 30 mint Oreo cookies
  • 10 tablespoons butter melted

For the Minty Green Shamrock Shake Layer:

  • 2 (8 oz) bricks of cream cheese softened
  • 3/4 cup powdered sugar
  • 1/2 (8 oz) tub whipped topping like Cool Whip, thawed, save the other half of the tub for the chocolate layer
  • 1 teaspoon peppermint extract
  • 2 - 3 drops green food coloring gel food dyes work the best, a more liquid food coloring may dilute the pudding texture

For the Chocolate Pudding Cream:

  • 2 (3.9 oz) packages of chocolate flavored instant pudding mix do not buy the Cook and Serve pudding, it must be instant
  • 1/2 (8 oz) tub whipped topping like Cool Whip, thawed
  • 2 cups cold milk

For Decorating the Top:

  • 1 (8 oz) tub whipped topping like Cool Whip, thawed
  • Maraschino cherries optional
  • Green sprinkles optional

Instructions

Prep the Oreo Cookie Crust:

  • Add the mint Oreo cookies to a food processor and pulse them until they are broken into fine crumbs. You could also crush them by hand with a rolling pin if you place them in a plastic food storage bag.
  • Pour the cookie crumbs into a mixing bowl. Pour in the melted butter. Stir them together until all the cookie crumbs are moistened with butter.
  • Pour the coated cookie crumbs into a 9x13-inch baking pan and use your hands to gently press them into the crust. Chill for at least 15 minutes before adding the next layer.

Prepare the Shamrock Shake Layer:

  • Add the softened cream cheese to a mixing bowl and give it a quick stir with an electric hand mixer. Scrape the sides down. Add the powdered sugar and beat them together. Scrape the sides.
  • Add the peppermint extract and green food coloring and beat them in for 1 minute. Be sure your mixture is a very bright green, once you add the whipped topping the color will soften.
  • Add just half of the tub of whipped topping and fold it in. Save the other half for the pudding layer.
  • Spread the mint cream cheese over the prepared Oreo cookie crust and chill for at least 15 minutes.

Prepare the Chocolate Pudding Layer:

  • Add both pudding mixes to a large mixing bowl. Pour in the milk and beat them together for 30 seconds or until the powder has mostly dissolved into the milk. Add the whipped topping and beat them together for 2 minutes.
  • Spread the chocolate pudding over the mint cream cheese. Chill for two hours.

Decorate and Serve:

  • Frost the torte with the remaining tub of whipped topping. Garnish with maraschino cherries and festive sprinkles as desired.
