Instant Pot Scallion Rice
Scallion rice cooks up quickly in an Instant Pot and is a budget-friendly side dish to use with a saucy Asian dish like your favorite stir fry or teriyaki chicken.

You could serve your favorite stir fry or rice bowl toppings over plain white jasmine rice or you could take just a few moments more and prepare this easy scallion rice in your Instant Pot for an easy flavor upgrade.

Ingredients

- Jasmine Rice
- Fresh Green Onions: I keep these washed and chopped and ready to use in an airtight container in my fridge.
- Soy Sauce or Tamari
- Sesame Oil
- Dried Ginger
Measure the Rice
Measure the rice and water for a 1:1 ratio. For the recipe below, you'll need 1 1/2 cups of each.

Season the Rice
Add the sliced green onions, soy sauce, sesame oil, and dried ginger to the pot an dstir everything together.

Cooking Instructions
Place the lid on the Instant Pot.
Set it to HIGH PRESSURE for 3 minutes.

You can do a quick release and serve it immediately or you can let it sit and keep warm and do a natural release of pressure for up to 20 minutes while the rest of your dinner finishes cooking.
Be sure to fluff the rice with a fork to incorporate the scallions that floated to the top while cooking.
Make Ahead Tips
I always make more rice in my Instant Pot than we need for that individual dinner because it freezes so well.
Even if you want less than what this makes, you can make a future dinner so much easier if you freeze the leftovers.
I use my Souper Cubes 1/2 cup or 1 cup trays for easy storage. This lets me reheat just enough for one quick dinner at a time on a busy night or a lighter lunch for me during the work week.

Variations
There are some very easy flavor boosters you could add to this simple rice dish to make it even more delicious:
- Minced Garlic: You could add 1 teaspoon of minced garlic before cooking.
- Frozen Peas or Diced Carrots: Add a cup of frozen veggies for an Asian-inspired rice pilaf.
- Chili Crisp: Spoon some chili crisp and oil over the rice bowls before serving.

Instant Pot Scallion Rice
Ingredients
- 1 1/2 cups jasmine rice
- 1 bunch green onions / scallions ends trimmed, thinly sliced
- 1 tablespoon soy sauce or tamari sauce
- 1 teaspoon sesame oil
- 1 teaspoon dried ginger
Instructions Start Cooking
- Measure the rice into the Instant Pot bowl. Add 1:1 ratio of water and stir. For 3 cups cooked rice you'll add 1 1/2 cups rice plus 1 1/2 cups water.
- Add the chopped scallions, soy sauce, sesame oil, dried ginger, and stir.
- Cover the Instant Pot and seal. Cook on HIGH PRESSURE for 3 minutes. Fluff the rice before serving. Sprinkle additional green onions over the top for garnish.
