I prepped a batch of these for our freezer within just minutes after a recent trip to Costco and they were an absolute lifesaver during an especially busy time for our family.

Ingredients

Your shopping list has rarely been this easy:
- Rotisserie Chicken: Or you can make your own homemade shredded chicken in the Instant Pot if you prefer.
- Cooked Jasmine Rice: I always make a double batch of my Instant Pot jasmine rice since it freezes so well!
- Japanese Barbecue Sauce: I used Bachan's that I picked up during a Costco run. You could use regular teriyaki sauce or any similar Asian sauce your family loves.
- Green Onions
- Sesame Seeds

How to Assemble the Bowls
I used my set of 2-cup Souper Cubes to assemble these individual rice bowls specifically because I wanted to be able to heat up just one at a time as needed, not an entire casserole dish for the family.
I spooned 3/4 cup rice into the bottom of each cube and spread it into an even layer.
Then I divided up the chicken over the top of each square.

Drizzle the Japanese BBQ sauce over the chicken and sprinkle the green onions and sesame seeds over the top.
Place the meal prep containers in your fridge for up to 4 days or in the freezer up to 3 months.
That's it! So easy.
Freezing Instructions
Souper Cubes come with plastic storage lids that help keep everything tucked inside and safe. However, these lids are not meant to be a long-term storage option, they are only good for flash freezing the food in the containers.
Place the lids on and freeze your rice bowls. I left mine in overnight.

Then be sure to pop the frozen cubes out of the containers and transfer them to a ziptop freezer bag for longer storage.

Then you can just grab one cube at a time as needed.
If you're using regular lidded storage containers, you can just keep the whole dish in the freezer. There'd be no reason to transfer them.
Reheating Instructions
When you're ready to heat and eat your frozen chicken rice bowls, place one cube in a microwave safe bowl.
Cover the dish with paper towel and heat the dish for 2 minutes at 50% power.

Use a fork to break up the chicken and rice cube a little so things can heat evenly.
Then cover the dish and return to the microwave. Heat on full power for 2 more minutes.
Variations
This meal prep method works really well with a variety of sauces:
- Tikka Masala Rice Bowls: I used a jar of Maya Kaimal Tikka Masala (also from Costco) for an easy Indian food variation on this dinner. It worked well with frozen peas added to the mix with the chicken.
- Buffalo Chicken Bowls: You could use buffalo sauce on the chicken and serve it with crumbled blue cheese after you've reheated it.
- BBQ Chicken Bowls: You could mix in frozen corn and use an American BBQ sauce.
Serving Suggestions

In order to boost the veggies and flavor, I served the teriyaki chicken bowls with pickled vegetables over the top when we first tried it. I loved the hot chicken combined with cold and crispy veggies.
I've also prepped these with frozen peas in the mix. You could plan to serve them with roasted broccoli or a batch of air fryer stir fry vegetables, too.
Or prep a batch of this zesty cucumber salad in minutes to serve on the side.
I found that the rice tends to absorb the teriyaki sauce as it reheats so you may want to have some additional sauce on hand to drizzle over the top when you serve dinner.
My homemade thick teriyaki sauce would be a great alternative to the store bought teriyaki and wouldn't soak up quite as much in the rice.

Rotisserie Chicken Teriyaki Rice Bowls
Ingredients
- 3 cups cooked jasmine rice
- 1 rotisserie chicken meat shredded or 2 cups homemade shredded chicken
- 1/4 cup Japanese BBQ sauce we use Bachan's
- 4 green onions trimmed and chopped
- 2 teaspoons sesame seeds
Instructions Start Cooking
- Place 3/4 cup cooked rice into each of the 4 meal prep containers. Top each bed of rice with a 1/2 cup shredded chicken.
- Drizzle 1 tablespoon of the Japanese BBQ sauce over each bowl. Sprinkle the chopped green onions and sesame seeds on top.
- Cover each dish with the meal prep container lid. Store in the fridge for up to 4 days or freeze up to 3 months.
- To reheat the meal, place it in a microwave safe dish and cover it with paper towel. Heat for 2 minutes on 50% power. Use a fork to break up the rice at the center so it heats evenly. Then return it to the microwave and heat on full power for 2 more minutes.
- The rice may absorb most of the sauce during the reheating process. You can garnish it with additional sauce as desired.
