Rotisserie chicken teriyaki rice bowls are the ultimate shortcut dinner. Packed with flavor, high in protein, and ready in minutes, you can meal prep a batch for your freezer even on a busy weeknight.
1rotisserie chickenmeat shredded or 2 cups homemade shredded chicken
1/4cupJapanese BBQ saucewe use Bachan's
4green onionstrimmed and chopped
2teaspoonssesame seeds
Instructions
Place 3/4 cup cooked rice into each of the 4 meal prep containers. Top each bed of rice with a 1/2 cup shredded chicken.
Drizzle 1 tablespoon of the Japanese BBQ sauce over each bowl. Sprinkle the chopped green onions and sesame seeds on top.
Cover each dish with the meal prep container lid. Store in the fridge for up to 4 days or freeze up to 3 months.
To reheat the meal, place it in a microwave safe dish and cover it with paper towel. Heat for 2 minutes on 50% power. Use a fork to break up the rice at the center so it heats evenly. Then return it to the microwave and heat on full power for 2 more minutes.
The rice may absorb most of the sauce during the reheating process. You can garnish it with additional sauce as desired.
