I prepped a huge batch of freezer breakfast sandwiches over the weekend and the egg patties were one of the easiest elements to make ahead.

I ended up freeze a big bag of just egg sandwiches because there are so many delicious ways you could top them when you reheat them! Don't miss my notes below.

Why This is the Best Recipe

I used to just make eggs one at a time when my kids wanted an egg sandwich for breakfast but I think this is the best baked egg patties recipe because:

Best Seasonings for Egg Patties

While these baked egg patties taste delicious with just a bit of salt and pepper, we like to add a little more flavor to our egg breakfasts.

Here are a few of our favorite seasoning blends for eggs:

Beat the Eggs

Prepping the eggs is so very simple. Just crack the eggs into a large mixing bowl.

Add the milk, salt and pepper, and any egg seasoning you want to use.

Whisk it together. That's it!

The eggs have been whisked and there is seasoning sprinkled over the top.

Baking Instructions

Preheat the oven to 325°F.

Rub softened butter all around the inside of a 9 x 13-inch pan.

The metal 9 x 13-inch baking pan has a thick coat of butter spread over the bottom.

Pour the eggs in and bake them for 18 minutes or until they are firmly set.

You don't want to overcook the eggs, but if they are a little jiggly at the center, you can bake them up to 20 minutes if needed.

The eggs have been baked and are a solid patty on the bottom of the baking pan.

Cool and Slice

Let the eggs cool slightly so they hold together.

Run a knife or spatula around the edge of the pan and then cut the eggs into 12 patty squares.

The egg patties have been sliced into squares and added to broiled english muffins on a baking sheet.

Make Ahead Tips

You can store the baked egg patties in the fridge in an airtight container for up to 5 days.

Just gently reheat them in the microwave and serve.

Freezing Instructions

You can freeze the baked egg patties for up to 3 months.

If you freeze them alone, be sure to separate them with layers of waxed paper or parchment paper so they don't stick together.

It works even better to have them tucked into a freezer breakfast sandwich.

Just thaw the egg patties in the fridge overnight and reheat them in the microwave.

Best Toppings for Egg Sandwiches

There are plenty of delicious ways you could top an egg sandwich.

I often mix and match any of the following items:

  • Fresh Tomato Slices
  • Fresh Arugula or Spinach
  • Leftover Grilled Peppers and Onions
  • Slices of Cheese: Cheddar, Provolone, Swiss
  • Add a Slice of Deli Meat
  • Slice of Canadian Bacon
  • Peppered Bacon
  • Turkey Sausage

Serving Suggestions

The plate has a pile of egg and english muffin sandwiches ready to be topped.

My favorite way to use these delicious baked egg patties is to tuck them into a sausage, egg, and cheese breakfast sandwich using my favorite turkey breakfast sausage.

You could also make a bacon egg and cheese breakfast sandwich with my peppered bacon.

I love that each egg patty isn't too thick, it is just the right amount of egg for my sandwich.

However, the egg patties are so easy to double up. You could skip the sausage and add 2 egg patties if you prefer.

Easy baked egg patties are the perfect make ahead protein for adding to a quick breakfast sandwich or wrap on a busy morning. Mix up the seasonings for fun variations on a delicious breakfast that you can store in the fridge or freezer.

Ingredients
  

  • 2 tbsp butter softened
  • 12 eggs
  • 2 tbsp milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp seasonings optional, see notes

Instructions

Cook the Eggs

  • Preheat the oven to 325°F. Rub the softened butter all around the bottom and sides of a 9 x 13-inch baking pan. Set the pan aside.
  • Whisk the eggs and milk together in a large mixing bowl. Add the salt, pepper, and seasonings if using and whisk again.
  • Pour the eggs into the prepared baking pan and bake for 18 - 20 minutes or until the eggs are set in the middle.
  • Let cool slightly. Run a spatula or knife around the edges of the pan and cut the eggs into 12 equal squares.

Storage: Fridge or Freezer

  • The baked egg patties can be stored in an airtight container in the fridge for up to 5 days. Reheat them gently in the microwave.
  • You can freeze the baked egg patties for up to 3 months. If you freeze them alone, be sure to place layers of waxed paper or parchment paper between the eggs so they don't stick together. Thaw the egg patties in the fridge overnight and then reheat in the microwave.
