Apple Snickerdoodle Dump Cake
This apple snickerdoodle dump cake has layers of warm, gooey apples under a buttery snickerdoodle cookie topping. With just one bowl and no mixer required, it's the perfect easy prep dessert for family dinners, holidays, or potluck parties.

As much as I love to bake from scratch, sometimes you just need a quick and easy dessert to bring to a potluck party or enjoy for a slow Sunday family dinner.
I hosted my parents for a last-minute soup night and whipped up this easy apple snickerdoodle dump cake as a special treat.
I served it warm with vanilla ice cream and caramel sauce and my parents enjoyed it even more than the main dinner!

Ingredients

Put these simple pantry ingredients together for a dessert that will taste like you spent hours baking:
- Tart Apples: I used Granny Smith but a pink lady could be a great choice, too.
- Snickerdoodle Cookie Mix: if you can't find snickerdoodle specifically, you could use a sugar cookie mix and then add your own cinnamon sugar.
- Butter
- Brown Sugar
- Sugar
- Orange Juice
- Lemon Juice
- Chopped Pecans or Walnuts

Prep the Apples
Peel, core, and slice the apples. I find it easiest to use this countertop apple peeler. It makes quick work of this step and you'll be done in minutes.

Place the apples in a large mixing bowl and add the brown sugar, white sugar, orange juice, and lemon juice.
Stir everything together and then transfer the apples to an 8x11-inch baking dish.
Prepare the Cookie Topping
Stir together the snickerdoodle cookie mix and chopped nuts. Sprinkle it evenly over the apples.

Melt the butter and drizzle it over as much of the surface as you can. You'll have some dry pockets poking though.
Baking Instructions
Preheat the oven to 350°F.
Bake the dump cake for 45 - 50 minutes.
At about 35 minutes, you may want to check the topping. The juices from the apples and the moisture from the butter should make the entire cookie surface come together but if you see any noticeably dry, floury-looking pockets, use a fork to gently nudge and stir those spots into the sauce below.

Make Ahead Tips
While the dump cake tastes best warm from the oven, you can store leftovers in the fridge for up to 3 days and reheat portions in the microwave.
Variations
- Use Fresh Pear Slices: You can use sliced pears (not canned) for this easy cake, too.
- Add Raisins or Craisins
- Make it Nut-Free by simply omitting the nuts

- 2 pounds (8 small) tart apples like Granny Smith
- 1/3 cup brown sugar
- 1/4 cup sugar
- 1/4 cup orange juice
- 1 tablespoon lemon juice
- 1 (17.9 oz) package of snickerdoodle cookie mix
- 1 stick (8 tablespoons) butter melted
- 1 cup chopped pecans or walnuts
- Vanilla ice cream or whipped cream for serving, optional
- Caramel sauce for serving, optional
Instructions Start Cooking
- Preheat the oven to 350°F. Spray an 8x11-inch baking dish with cooking spray and set aside.
- Peel and slice the apples. Place them in a large mixing bowl. Add the brown sugar, sugar, orange juice, and lemon juice. Toss everything together to coat well. Scrape the mixture into the prepared baking dish and spread into an even layer.
- In a medium sized mixing bowl, stir together the contents of the snickerdoodle cookie mix and the pecans. Sprinkle the mixture evenly over the apples. Drizzle the melted butter over the top of the cookie mix.
- Bake the cake for 45 - 50 minutes or until the top is golden brown and the apples are tender. Serve warm with a scoop of vanilla ice cream and a drizzle of caramel sauce or with dollops of whipped cream.
