Creamy Boat Dip
Boat dip is a quick, budget-friendly appetizer made from sour cream, Rotel tomatoes, a couple packets of seasoning, and cheddar cheese. Stir it together in minutes and pack it for your next potluck party or snack spread.

When I was prepping food for our graduation party for 50 guests, I relied heavily on make-ahead appetizers I could prep in advance.
This easy, creamy boat dip was one of the most popular dishes I served that day and we had so many friends begging for the recipe as they scooped up chip after chip of that spicy dip.
Just in time for summer snacking, this is an easy snack recipe you're going to want to add to your rotation for the weekends ahead.

Ingredients

- Sour Cream: I used light sour cream but you could use the full fat or fat-free if you prefer.
- Taco Seasoning: You can change the flavor profile dramatically by adjusting whether you use mild, medium, or spicy hot.
- Ranch Seasoning: You can add heat by using a spicy ranch or keep it milder and use a classic ranch.
- Shredded Cheddar Cheese: You could shred your own but this is one recipe where I don't mind using the store bought prepared bags since there's no melting involved.
- Rotel Tomatoes: I used the original but you could adjust the heat by using mild or hot. If you can't find Rotel, a generic can of diced tomatoes with green chiles will work just fine!
- Green Onions
- Tortilla Chips: for serving.
One Bowl Prep
Making this dip couldn't be easier.
Simply add all the ingredients (except the green onions) to a large mixing bowl and stir them together.

Want to Save This for Later?
Add the Onions
When I chopped the green onions, I scooped up all the chopped white ends and about half of the green part to stir right into the dip.
I reserved the remaining green onions to sprinkle over the top as garnish.

Chill Time
Transfer the dip to a pretty serving bowl and garnish it with the remaining green onions.
Cover with plastic wrap and chill for at least 30 minutes for the flavors to mingle.
Make Ahead Tips
This is a perfect make-ahead recipe. It can be stored in the fridge for up to 48 hours before your party.
Serving Suggestions

I served this dip alongside a big bowl of tortilla chips for dunking and it was one of the most popular party recipes at our event! Guests were begging for the recipe before they left.
You could also serve it alongside fresh raw veggies like celery and bell peppers for a low carb appetizer.

Boat Dip
Ingredients
- 1 (16 oz) container of sour cream
- 1 (10 oz) Rotel tomatoes or other brand of diced tomatoes with green chiles, drained
- 3 tablespoons dried ranch dressing powder or 1 packet of dressing mix
- 3 tablespoons taco seasoning or 1 packet of seasoning mix
- 1 (8 oz) package of shredded cheddar cheese about 2 cups
- 2 - 3 green onions thinly sliced, both white and green parts
- Tortilla chips for serving
Instructions Start Cooking
- Add the sour cream and the drained canned tomatoes to a medium mixing bowl. Add the ranch powder, taco seasoning, and cheese. Stir everything together until well combined.
- Add half the green onions to the bowl and stir them in. Scrape the dip into your serving dish and sprinkle the remaining onions over the top. Chill for 30 minutes to let the flavors mingle.
- This dip can be made ahead up to 24 hours in advance and kept in a covered dish in the fridge.
