Caribbean Jerk chicken with bell peppers and onions cooked in the air fryer or roasted in the oven make a quick dinner recipe for serving with rice, sweet potatoes, or pasta.
Place the chicken in a large mixing bowl. Drizzle the olive oil over the top and toss gently with a fork or tongs. Sprinkle the seasoning over the top and toss again.
Chop the bell peppers and onion into large chunks. Add them to the mixing bowl and toss with the chicken to coat in the oil and seasonings.
Preheat the air fryer to 400°F for 5 minutes.
Pour the entire mixing bowl into the air fryer basket and shake into an even layer.
Cook for 10 minutes and then turn the chicken pieces over and toss the veggies.
Cook for an additional 10 - 12 minutes or until the chicken registers 185°F on a thermometer and the veggies are beginning to char.

NOTE ON CHOPPING THE VEGGIES:
Thin strips of bell peppers and onions will cook faster than the chicken. If you want to use them for making fajitas, etc., just reserve the vegetables and cook the chicken alone for the first 10 minutes. Add the veggies and toss with the chicken to coat in the seasoning and cook for the remaining 10 minutes.
How to Roast in the Oven:
If you prefer to cook this dish in the oven, preheat the oven to 400°F. Spread the chicken and peppers on a large baking sheet in a single layer with space between the veggies. Roast for 15 - 20 minutes or until the chicken registers 185°F on a thermometer and the veggies are just beginning to char.
