Fresh juicy peaches mixed with red onion and bell peppers makes a surprisingly different fresh salsa for summer entertaining. Excellent served with grilled chicken or fish.

YIELD 3cups salsa
Ingredients
3firm ripe peachessmall diced
1/2small red onionsmall diced
1/2red peppersmall diced
1jalapeño pepperribs and seeds removed, minced
1limejuiced
1/2bunch of cilantrochopped
Dash of kosher salt
1/4tspchili powder
1/4teaspooncumin
Scant sprinkle of cayenne pepper
Instructions
Wash and slice the peaches to remove the pits. Dice the fruit into small pieces and add it to a medium sized mixing bowl.
Small dice the onion and red bell pepper and add to the bowl
Cut the stem from the jalapeño and slice the pepper in half lengthwise. Use a spoon to remove the ribs and seeds and discard them. Mince the remaining pepper and add it to the bowl.
Squeeze the lime juice over the top and add the chopped cilantro. Sprinkle the kosher salt and the dried chiptole chile pepper powder or cumin over the top. Toss everything together until well combined.
Cover and chill the salsa until you're ready to serve. The peach salsa will keep, covered in the fridge, for up to 3 days.
Recipe Notes
If you want an extra spicy salsa, you can leave the ribs and seeds from the jalapeño pepper. Just chop them finely before adding to the salsa.
