Ingredients
2tbspbuttersoftened
12eggs
2tbspmilk
1tspsalt
1/2tsppepper
1/2tspseasoningsoptional, see notes
Instructions
Cook the Eggs
Preheat the oven to 325°F. Rub the softened butter all around the bottom and sides of a 9 x 13-inch baking pan. Set the pan aside.
Whisk the eggs and milk together in a large mixing bowl. Add the salt, pepper, and seasonings if using and whisk again.
Pour the eggs into the prepared baking pan and bake for 18 - 20 minutes or until the eggs are set in the middle.
Let cool slightly. Run a spatula or knife around the edges of the pan and cut the eggs into 12 equal squares.
Storage: Fridge or Freezer
The baked egg patties can be stored in an airtight container in the fridge for up to 5 days. Reheat them gently in the microwave.
You can freeze the baked egg patties for up to 3 months. If you freeze them alone, be sure to place layers of waxed paper or parchment paper between the eggs so they don't stick together. Thaw the egg patties in the fridge overnight and then reheat in the microwave.
