Instructions
Prep the Eggs
Preheat the oven to 325°F. Spread the softened butter all around a 9 x 13-inch baking pan and set aside.
Whisk the eggs, milk, salt, and pepper together in a large bowl. Pour into the prepared pan.
Bake for 18 minutes or until the eggs are just set. Cool slightly, cut into 12 squares, and set aside to cool completely.
Prep the Sausage
In a large mixing bowl, mix the ground turkey and seasonings together with a fork.
Heat the olive oil in a skillet over medium-high heat.
Divide the turkey sausage into 12 portions. Pat each one into a patty shape. Working in batches of 4 - 5 patties a time, brown the turkey sausage for 2 - 3 minutes on the first side and flip. Brown for 2 - 3 minutes on the second side or until the patties are golden brown and read 165°F on an instant read probe thermometer. Set aside to cool completely.
Assemble the Sandwiches
Preheat the oven broiler with the top rack just 6 inches from the heating element.
Split the english muffins and place them in a single layer, cut side up, on a broiler-safe baking pan. Broil the english muffins until just toasted. Watch carefully so they don't burn. You may need to do this in 2 batches.
Layer the toasted english muffins with one egg patty, one sausage patty, and one slice of cheese.
Wrap each sandwich individually in aluminum foil or plastic wrap for the freezer and freeze up to 3 months.
To Reheat Frozen Breakfast Sandwiches
For best results, thaw the frozen breakfast sandwiches in the fridge overnight. Remove the foil or plastic wrap and then reheat in the microwave for 1 minute on HIGH.

Sausage Alternatives:
If you don't want to make this recipe with the ground turkey sausage, my easy baked peppered bacon would make a perfect swap. You could also keep these vegetarian-friendly by skipping the meat altogether and just making a few with just eggs.
