This easy roasted vegetables side dish is perfect for serving alongside your favorite Italian pasta dishes or even tossing right into a pasta primavera.

Ingredients
1broccoli crownchopped into bite-sized florets
1carrotpeeled and sliced into short strips
1red bell peppersliced into thick strips
1small red onionsliced into thick strips
2tbspolive oil
1pinchsalt and pepper
Instructions
Add the chopped broccoli, carrots, red peppers, and red onion slices to a large baking sheet. Drizzle the olive oil over the top and toss the vegetables with a spoon to coat. Sprinkle the salt and pepper over the top.
Oven Instructions
Preheat the oven to 425°F.
Roast the vegetables for 20 minutes, tossing them half way through so they brown on all sides.
The veggies can keep warm in the oven as needed if you are still prepping the rest of your meal. Just turn the oven off and crack the door an inch so they don't overcook.
Air Fryer Instructions
Preheat your air fryer to 400°F.
Add the prepared vegetables coated in oil to the air fryer basket and cook for 10 minutes. Shake the basket to toss the veggies and continue to cook for an additional 10 minutes or until the veggies just begin to char.
