2cupsold fashioned oats
1/4cupchopped walnuts
3tbspbrown sugar
1tspcinnamon
1/2tspbaking powder
1/4tspsalt
3/4cupmilk
1cupunsweetened applesauce
2eggs
Zest from 1 lemon
Juice from 1 lemon
2tspvanilla
2cupsblueberriesfresh or frozen
1tbsp softened butterfor the baking dish
Instructions
The Night Before:
In a large mixing bowl, add the oats, walnuts, sugar, cinnamon, baking powder, and salt. Use a spatula to stir them together until evenly combined.
Pour in the milk, applesauce, eggs, lemon zest, lemon juice, and vanilla. Mix everything together until well combined.
Add the blueberries to the bowl and gently fold them into the oat mixture.
Rub 1 tbsp softened butter around a 7 x 11-inch baking dish. Scrape the blueberry oatmeal mixture into the pan and spread it into an even layer.
Cover the dish with plastic wrap and chill in the fridge overnight.
Bake In The Morning:
