These amazing chocolate chip walnut cookies are based on the DoubleTree cookie recipe and can be prepped for making a small batch of chocolate chip cookies direct from the freezer.

Ingredients
1cup(2 sticks) buttersoftened
3/4cupplus 1 tablespoon sugar
3/4cuppacked light brown sugar
2large eggs
1 1/4teaspoonsvanilla extract
1/4teaspoonfreshly squeezed lemon juice
2 1/4cupsflour
1/2cuprolled oats
1teaspoonbaking soda
1teaspoonsalt
Pinchof cinnamon
2 2/3cupsNestle Toll House semisweet chocolate chips
1 3/4cupschopped walnuts
Instructions
Prepare the Cookie Dough
Cream the butter, sugar, and brown sugar in the bowl of a stand mixer fitted with the paddle attachment for 2 minutes. Scrape the bowl.
Add the eggs, vanilla, and lemon juice and combine on low speed for 30 seconds. Scrape the bowl and then beat on medium speed for 2 minutes or until the mixture is light and fluffy.
Add the flour, oats, baking soda, salt, and cinnamon and mix together on low speed. Stop after 45 seconds or as soon as the dough is just barely blended.
Add the chocolate chips and walnuts, let the mixer just barely incorporate them. Finish stirring by hand if needed to ensure the cookies aren't overmixed.
To Bake Immediately:
Preheat the oven to 300°F. Drop cookie dough balls, about 3 tablespoons in size, onto a baking sheet lined with parchment paper. Leave 2 inches between each cookie ball.
Bake for 20 - 23 minutes or until the edges are golden brown and the center is soft.
Remove from the oven and let cool on the warm baking sheet for 1 hour.
To Freeze the Cookie Dough:
To make a small batch of chocolate chip cookies fresh later, you can freeze the cookie dough balls before baking.
Portion out 3-tablespoons sized cookie dough balls and line them on a parchment covered baking tray. Just leave 1/2 inch of space between each cookie dough ball so they don't stick together.
Flash freeze the cookie dough balls for 1 hour. Then transfer the frozen cookie dough balls to plastic bags with the date.
To bake frozen cookie dough, preheat the oven to 300°F. Place the frozen cookie balls on a baking sheet with parchment paper with 2 inches of space between each cookie.
Bake until the edges are golden brown and the center is still soft, about 25 minutes. Let cool on the pan for 1 hour. Cookies will look slightly under done but will firm up as they cool.
