For a 1.5-pound Loaf
1/3cupmilk
1/2cupmashed ripe bananasfrom about 1 1/2 bananas
1large egg
2tbspbuttersoftened and cut into pieces
3cups(411 g) bread flour
3tbspsugar
3/4tspkosher salt
1/4tspcinnamon
1tspinstant yeast
3/4cupchopped pecans
For a 2-pound Loaf
1/2cupmilk
2/3cupmashed ripe bananasfrom about 2 bananas
1large egg
2tbspbuttersoftened and cut into pieces
4cups(548 g) bread flour
1/4cupsugar
1tspkosher salt
1/2tspcinnamon
1 1/4tspinstant yeast
Instructions
Add the ingredients to your bread machine's baking pan in the order they are listed, starting with the milk and ending with the yeast. Reserve the pecans for adding to the machine during the mix-in cycle.
Select the BASIC/WHITE program based on your machine's options. Then select the coordinating setting from your loaf size on your machine and press Start.
Most machines will alert you with a beep when it is time to add the pecans. If yours does not, add them in the middle of the second knead cycle.
When the loaf is done, remove it from the bread pan and transfer it to a wire rack to cool for at least 30 minutes before serving.
