1 3/4cupsmilk
1 1/2tspvanilla
1/2cupvegetable oil
1/2cupmini chocolate chipsoptional
For Serving:
Strawberry freezer jamoptional
Whipped Creamoptional
Instructions
If you want to serve the waffles family-style all at once, preheat your oven to 200°F with a large baking sheet inside.
In a large mixing bowl, whisk together all the dry ingredients first. Add the flour, cornstarch, dried peanut butter powder, sugar, baking powder, and salt. Whisk them together until well combined.
Measure the milk in a liquid measuring cup and then crack the eggs into the milk. Add the vanilla and whisk them together. Add the milk mixture to the dry ingredients. Then measure the vegetable oil and pour that in, too.
Gently stir the waffle batter together. It will be a very thin batter and you may still have some lumps, but be sure to break up any remaining dry pockets of flour.
Stir in the mini chocolate chips if using them.
Preheat your waffle iron. Once it is ready to cook, spray the wells with cooking spray and then add the batter according to your appliance's direction. For my waffle maker with four wells that make 4-inch waffles, I use 1/3 cup batter for each well. I cook the waffles for 4 minutes and they come out perfectly golden brown.
Use a pair of tongs to lift the waffles from the waffle iron. Transfer them to the preheated oven to keep warm while you finish the remaining batch or let them cool on a rack if you are making them ahead for the freezer.
Peanut butter waffles with chocolate chips taste amazing with a drizzle of strawberry jam and whipped cream on top but would pair well with a spread of softened butter or cream cheese, too.
Recipe Notes
How to Freeze Peanut Butter Waffles:
This recipe freezes very well. To freeze the waffles, be sure to let them cool completely on a rack. Layer them between pieces of parchment paper or waxed paper and store in a plastic freezer-friendly storage bag.To use frozen waffles, you can let them thaw in the fridge overnight and then heat them in the toaster or in a single layer in the oven set to 350°F until warmed through.Alternatively, you could thaw the frozen waffles in the microwave for 2 minutes on 50% power and then finish in the toaster so they get nice and crispy.
