Thin and crunchy peanut butter cookies are filled with a sweet peanut butter frosting and turned into the tastiest cookie sandwiches you've ever had! Don't forget a tall glass of milk to go with them. Adapted from The Great Minnesota Cookie Book.

Ingredients
1 1/4cuproasted peanuts
3/4cupflour
1tspbaking soda
1/2tspsalt
3tbspbuttermelted
1/2cupcreamy peanut butter
1/2cupsugar
1/2cuppacked light brown sugar
3tbspmilk
1egg
For the filling:
3tbspbutter
3/4cupcreamy peanut butter
1cuppowdered sugar
1/2tspground ginger
Instructions
Add the peanuts to the bowl of a food processor and pulse them until they are finely chopped. (Or you can chop them by hand.) Set them aside.
Whisk together your dry ingredients in a medium sized bowl: flour, baking soda, and salt. Set aside.
Add the butter to a microwave-safe container and heat it until melted. Add the melted butter, peanut butter, sugar, and light brown sugar to the bowl of a mixer with the paddle attachment and beat until everything is combined. Add the milk and the egg and beat to combine. Add the chopped peanuts and stir until just combined. Scrape the cookie dough off the beater and then cover it with plastic wrap. Chill the cookie dough in the fridge for at least one hour.
Preheat the oven to 350°F. Line baking sheets with parchment paper or a silicon mat.
Use a small spoon to scoop just a 1/2-inch sized ball of dough onto the prepared cookie sheets. Gently pat the dough ball into a flat, 1-inch round disk. The more uniform your discs, the easier matching up cookies for the sandwiches will be.
Bake until the cookies are slightly toasted looking, about 10 - 13 minutes.
Let the cookies cool completely before assembling them into sandwiches.
Prepare the filling:
Add the butter to a microwave-safe container and heat until melted, about 30 seconds. Pour the melted butter into a medium-sized mixing bowl. Add the peanut butter, powdered sugar, and ground ginger. Gently stir the ingredients together with a spatula. The filling will become thick like play dough. Use the back of your spatula to smush and flip the filling until the powdered sugar is completely incorporated into the peanut butter.
Assemble the cookies:
Match your baked cookies up into similar sized pairs. Use a butter knife to spread a generous dollop of filling onto one cookie and then add the second cookie to form the sandwich. Press gently so the filling meets the edge of the cookies.
