This bright and fruity blueberry vinaigrette is made with a jar of blueberry preserves and simple pantry ingredients. It pairs really well with chicken, nuts and crumbled cheeses, and berries or fresh stone fruits.
Measure the canola oil, white wine vinegar, and blueberry preserves in a large measuring cup. Sprinkle in the salt and pepper. Use an immersion blender to mix the vinaigrette together. Alternatively, you can use a blender to emulsify the dressing if you prefer.
Store in a mason jar in the fridge for up to 1 week.
