Flaky and delicious puff pastry reuben roll ups are made with corned beef, sauerkraut, and Swiss cheese in a bite-sized appetizer that can be prepped ahead. Bake and serve them for a fun St. Patrick's Day appetizer or holiday party nibble.

1sheet frozen puff pastrythawed
1egg+ 1 tablespoon of water
3tablespoonscream cheese
2tablespoonsThousand island dressingplus more for serving
1/2cupdeli corned beefabout 4 - 5 slices, chopped
1/2cupshredded Swiss cheese
1/4sauerkraut
Instructions
Prepare the Reuben Roll Ups Log: (1 - 24 hours in advance of baking)
Gently unfold the puff pastry and use a rolling pin to smooth out the creases.
Crack the egg into a small cup and add 1 tablespoon of water. Whisk them together with a fork and brush it over the top of the pastry. Set aside the remaining mixture.
Add the softened cream cheese and Thousand island dressing to a small mixing bowl. Stir them together. Spread the mixture over the top of the rolled out pastry.
Sprinkle the corned beef over the top of the cream cheese layer, leaving just a 1/4-inch border around all the edges. Then top with the sauerkraut and the shredded cheese.
Roll the pastry up into a log and tightly wrap in plastic wrap. Place it in the fridge to chill for at least one hour or up to 24 hours in advance. If you're planning to do this the day before, be sure to place the egg wash in an airtight container and store it alongside the roll in the fridge. You'll need it for brushing before baking.
Bake the Reuben Pinwheels:
Preheat the oven to 400°F. Line a large baking sheet with parchment paper and set aside.
Place the log on a cutting board and remove the plastic wrap. Slice the log into 18 equal pieces, about 1/2-inch in width. Place them cut side up on the prepared baking sheet. Brush the tops and sides with the reserved egg wash.
Bake for 15 minutes or until the puff pastry has puffed up and turned a lovely golden brown. Serve with additional Thousand Island dressing for dipping.
