Cozy stuffed pepper soup comes together quickly in the Instant Pot for a fast family dinner on a busy weeknight. Savory ground beef in a tomato-based soup broth with hearty chunks of bell peppers is delicious served with fresh bread or biscuits on the side.
Add the olive oil to the Instant Pot and turn on the Saute setting. Add the ground beef and break it up with a spoon as it browns. Add the diced onion and stir. Continue to cook the beef until no longer pink.
Add the minced garlic to the pot and stir. Cook for 30 seconds or until fragrant.
Add the canned tomato sauce, diced fire roasted tomatoes, chopped bell peppers, and seasonings to the Instant Pot. Stir them all together.
Add the beef broth (or water and bouillon) and stir. Add the rice and stir once more.
Turn the Saute setting off. Cover the Instant Pot and cook on High pressure for 10 minutes.

How to Reheat Leftover Soup
This cozy stuffed pepper soup has a perfect texture when it is served fresh from the Instant Pot. Leftovers will keep well in the fridge but the rice will continue to absorb the liquid from the broth and the soup will become much thicker and resemble a creamy rice stew.To reheat the soup, warm it in a saucepan on the stove adding additional beef broth to thin the texture out as desired. Additional broth may water down the original seasonings balance so you may want to add a sprinkle more of Italian herb seasoning and a dash of hot sauce to liven up the leftovers.
