This light and creamy pistachio fluff fruit salad makes a great holiday side dish or no bake dessert. Top it with chopped pecans for color and crunch.

Ingredients
1(3.4 oz) box instant pistachio pudding mix
1(20 oz) can pineapple tidbits with juices
1(8 oz) container Cool Whip
2cupsmini marshmallows
1/3cupchopped pecansoptional
Maraschino cherriesfor garnish (optional)
Instructions
Add the packed of dry instant pudding mix to a large mixing bowl. Do NOT add the milk the box calls for, you just want to use the dry mix.
Add the entire can of pineapple tidbits with their juices to the bowl. Stir them into the pudding mixture to hydrate and dissolve the powder.
Add the mini marshmallows and chopped pecans, if using, to the bowl an stir them in.
Add the thawed Cool Whip last and gently fold it in.
Transfer the pistachio fluff to a serving bowl for a pretty presentation. Top with additional chopped pecans or Maraschino cherries for garnish. Chill until ready to serve, at least 1 hour.
Recipe Notes
This recipe can be made up to 3 days in advance and kept stored in the fridge covered in plastic wrap so it stays hydrated.Will not freeze well.
