Chicken Taco Soup

Easy Ingredients:

Rotisserie chicken, chicken broth, diced tomatoes, cream style corn, red enchilada sauce, green pepper, onion, taco seasoning

Soften the Veggies

Perfect for leftovers hanging in the fridge! We used green bell pepper and half an onion softened in a bit of olive oil.

Thicken the Soup

There are NO BEANS in this recipe, so the broth is thickened with: Enchilada Sauce Creamed Corn

Dice the Chicken

Gently, gently, gently. Cooked chicken is actually quite delicate. Only add it a few minutes before the soup is ready so it can just heat through.
