Some of my favorite recipes have started to get buried in the archives of this blog. When I go to pull them up for my own reference, I usually have a little shock as I see just how far my photography has come in the last couple years. Rather than edit the photos on the original post, I thought it might be fun to periodically dig up the old favorites and share updated images in new posts.
First up is one of my essential freezer staples: roasted tomato sauce.
Once I tasted this, there was no going back to jarred spaghetti sauce ever again. I make up huge batches and then freeze in 2 cup servings–perfect for tossing over pasta for dinner.
I usually buy large packages of roma tomatoes from Costco for this recipe. We love experimenting with their filled tortellini. This particular night we had the chicken and bacon filled tortellini. Tossed with the tomato sauce and some freshly chopped green onions from my garden and I swear this tasted just like a BLT in pasta form.
