This fresh strawberry vinaigrette is the perfect salad dressing to drizzle over chicken and fresh fruit and lettuce.

This easy strawberry vinaigrette is the perfect complement to a long list of salad mixes.

Drizzle it over chicken, shrimp, or even a salad with chopped hard boiled eggs.

This homemade strawberry vinaigrette takes just seconds to make and is the perfect balance of sweet & savory.

A little drizzle of this strawberry vinaigrette will complement all the fruits and veggies in your salad and pairs really well with chicken.

Ingredients

I love how short the ingredient list for this recipe is! It is perfect for strawberry season when the berries are perfectly red and juicy.

  • Fresh strawberries
  • Strawberry jam: I always use our homemade strawberry freezer jam for this but you can use whatever you like.
  • Canola oil
  • White wine vinegar
  • Dijon mustard
  • Onion salt
  • Poppy seeds

How to Build the Perfect Salad

Start with the Green Base

Pile up a big plate of your favorite greens. You could mix and match any of the following to suit your tastes:

  • Chopped romaine
  • Spring mix
  • Baby spinach
  • Baby kale

Mix and Match the Fruit Toppings

Then add a fun variety of any of these fruit and veggie toppings:

  • Strawberries
  • Shredded carrots
  • Chopped pineapple
  • Chopped green apples
  • Blueberries
  • Shredded purple cabbage

Add a Protein

If you're serving this as an entree salad, adding a little protein is a great way to make the salad more filling.

Make Ahead Tips

If you want to make this salad ahead of time or you want to enjoy it for several lunches during the week, I recommend that you prepare all the ingredients and then be sure to store them separately in the fridge!

They will stay fresher longer and they allow you to mix and match throughout the week.

Fresh Strawberry Vinaigrette

This thick and creamy strawberry vinaigrette is the perfect salad dressing for a chicken and fruit salad.
TOTAL TIME 5 minutes
PREP TIME 5 minutes
YIELD 1 cup dressing

Ingredients
  

  • 1/2 cup canola oil
  • 3 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp onion salt
  • 6 fresh strawberries
  • 2 tbsp strawberry jam
  • 1 tsp poppy seeds

Instructions

  • Combine the oil, vinegar, mustard, onion salt, strawberries, and jam with an immersion blender (or in your regular blender) until thick and emulsified.
  • Add the poppy seeds and stir to combine. Store in the fridge.
